The Alvares Diaz family has been producing coffee in the hilly area of Santa Ana – El Salvador for over four generations.
We are in the western part of the country where, the fertile volcanic soils, the mild climate and the particular cultivation in natural shade, created by the presence of taller native trees in the ecosystem, offer unique conditions for the development of specialty coffees.
Finca La Reforma covers about 36 hectares, mainly cultivated with varieties Red Bourbon. The harvest is done exclusively by hand to ensure the highest quality in the selection of the most ripe drupes.
The micro batch that we managed to select has undergone an experimental process: double processing Natural / Washed.
The batch was initially prepared with the natural method. It was dry fermented on raised beds. When the cherries reached the desired residual humidity, they were processed in the historic family mill, El Borbollon.
Peel and mucilage removal is only partial. They were left for the next step and only thanks to the “washed” process, removed by fermentation.
The result is an unmatched increase in body and sweetness. In the cup it develops a remarkable aromatic complexity with hints of fresh fig, cashews and sultanas.
